We have tested the new connector with multiple weights and docks, the lightning connector holds onto the iPhone a lot stronger than the old 30 pin connector.

Here’s Vapor Dock by Element Case, iPhone 5 is easily able to lift the dock in air and it won’t fall off even if you bounce it up and down.

The new docks for iPhone 5 will need to be about twice as heavy for being able to undock with one hand only. We did a weight-test and it seems you need at least 0.6 kilos (1.2 pounds) of counter-weight to be able to undock your iPhone 5 with just one hand, and even then it might bounce in the air by a tiny bit before letting go of the Lightning connector.
